1-bowl Walnut and Chocolate Banana Bread (vegan)
Easy vegan banana bread that can be prepared in 1 bowl. Your husband will thank you for the minimal dish-washing.

    Ingredients

    1. Mix flaxseed meal (or chia seeds) and water together. Let it set for 5 minutes. This mixture replaces 1 egg.
    2. Preheat the over to 350 degrees F and line a medium sized loaf pan with parchment paper. I used a silicon loaf pan so I skipped the parchment paper.
    3. Mash banana in a large mixing bowl. Add all ingredients except almond meal, flour, oats and the walnuts and chocolate that will be used for topping. Whisk vigorously until the mixture is even.
    4. Add almond meal, flour and oats. Stir well into mixture.
    5. Pour mixture into loaf pan. Even it out with the back of a spoon.
    6. Press a few walnuts and chocolate chips on top of the mixture.
    7. Bake for 1 hour. The top should be golden brown and the bread firm. Bake for another 15 minutes if this is not the case.
    8. Let cool completely before taking it out of loaf pan and cutting.
    Recipe Notes

    If you prefer a classic banana bread, omit the walnuts and chocolate chips. It is just as delicious without, although I do enjoy theĀ extra indulgence of the original recipe.
